Our neighbours on the Iblei mountains, Tessa and Jorge, who use agro-ecology to grow oregano, Pascià chickpeas and small green Sicilian lentils along the Manghisi river, and who also offer stone-ground flour made from their ancient Sicilian wheat, Rusello e Timillia.
